Control Your Acidity
Sodium bicarbonate attributes to the alkalinity or carbonate hardness (KH) in your water, and will directly contribute to the amount of perceived acidity in your brewed coffee and can be used as a buffer. When used in conjuction with magnesium chloride, the end result will be a smooth, complex, full-bodied brew that will work well across the coffee roasting spectrum. Sodium bicarbonate can also be used to offset bitter flavors that you may be getting, and will help achieve a smooth finish in both filter coffee and espresso. One drop of the Lotus sodium bicarbonate concentrate is equal to 5 parts per million (PPM) in the Lotus 450mL mixing bottle. We recommend using distilled water or water that has undergone reverse osmosis treatment for the best results.
